Aguilar founded author cropping in 2008, and has pioneered urban gardening in Mexico. He also offers the best ingredients to some of the best restaurants in Mexico City. His project is to offer ingredients that he personally grows in an organic, ethical and sustainable way. The fact that they are grown in the Escandón barrio makes them the freshest ingredients in the Mexico City market with the lowest carbon footprint. His products are delivered using public transportation or bicycles. He collaborated with Casa Gallina by teaching Alternative Plant Reproduction in Small Spaces, as part of the Herbal Workshop.
