Espinosa holds a degree from the School of Dietetics and Nutrition of ISSSTE and a master’s in Public Health from the School of Public Health of Mexico. She collaborated for years with food programs in the National DIF. She has coordinated health and nutrition programs for a civil society organization focusing on children’s rights, as well as consulted on an investigation about Mexican eating habits for a private health institution. She has given various conferences and workshops on healthy eating. Currently she collaborates as investigator in dietary health for “The Power of the Consumer,” which forms part of the Alliance for Food Health.
